I know I warned you all that the pumpkin is coming, but I’m holding as long as I can – because there are still plenty of ways to be “all festive about fall” that don’t come from a large orange gourd. I’ve made decent progress so far; I started off with Carrot Cake Smoothies and quickly moved on to Lasagna Soup, both of which are perfect foods to enjoy while watching the autumn leaves fall.
But you know what?
I realized that I had completely skipped over another late summer / early fall treat: apples.
In fact, the last apple recipe I posted was all the way back in March. March!
And I’m asking your forgiveness with this Apple Brickle Dip.
I’m not gonna lie – this is the best dessert dip I’ve ever made, hands down. It’s even better than the Cookie Dough Dip, and that’s saying something – I’ve been singing the praises of that dip for the better part of a month now. And I still love it… but I love this dip more.
The real secret that makes this dip stand out?
The crushed up Heath bars.
Many brickle dips will say just to use plain old toffee dips, and you could do that – I guess. I’ll admit that’s exactly what I tried to do, too, but after frantically searching the grocery store for 20 minutes I realized that my store (a very large chain) did not carry toffee bits. So I did the next best thing I could think of: grabbed a multi pack of Heath bars and crushed them up.
The added bonus to this approach?
The chocolate from the Heath bars is also in the dip. It seriously takes this toffee dip to a whole other level.
I was also fortunate enough to test this Apple Brickle Dip out on my father-in-law and mother-in-law, and like me, they absolutely loved it.
… Did you catch that? My father-in-law. My mother-in-law. Because as of yesterday, The Boyfriend is now The Husband. My new in-laws were in town to be our witnesses as a very jolly judge married us at the city courthouse.
So as you can see, the least I could do was provide them with some delicious dip for making the trip down to Phoenix for us. And going by their reaction, I think I made it well worth their time – in addition to adding a new daughter-in-law to their family. In a way, I suppose this dip was my wedding cake – and I’m totally okay with that!
Apple Brickle Dip
Fruit, chocolate, and toffee bits served up as a ultra creamy finger food dip? Talk about the perfect way to kick off your next party! (eggless and no bake)

- 8 oz cream cheese room temperature
- 1/2 cup light brown sugar
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 4 heath bars crushed and crumbled (or 1 cup toffee bits)
- 4 apples sliced, any type

- Using a stand mixer (or a hand mixer + small bowl), add in cream cheese and brown sugar. Beat on medium speed until fluffy, about 2 minutes.
- Drop mixer speed to low and add in powdered sugar and vanilla. Mix until thoroughly combined.
- Using a spatula or spoon, fold in crumbled & crushed heath bars (or toffee bits) until crumbles are evenly dispersed. Top dip with a few more crumbles, if desired.
- Serve immediately with apple slices or nilla wafers. If preparing in advance: Keep in the refrigerator until ready to serve. Dip will need to be returned to room temperature before serving.
