This meal plan is part of a weekly series where I put together quick and easy dishes to help get you through the week. If you’re a foodie like me, then you know that sometimes all the meal possibilities can seem endless – and daunting – especially when you’ve got to juggle all your other responsibilities, too. I hope the weather in your neck of the woods has been good this week! Down here in Phoenix, the weather has been amazing – if not a little too hot. I know you’re probably rolling your eyes at me right now, and I get it, I really do, but the Valley of the Sun also only gets about two or three weeks of enjoyable weather before summer comes roaring in. So if I talk about the weather a lot, it’s only because I’m trying to cram a whole spring’s worth of enjoyableness (a word? Maybe? No?) into a few short days. Plus, this nice weather has helped take the sting off my mother returning home to Virginia. I’m already looking forward to her next trip.
So, what is in this week’s meal plan? I’m still trying to get a feel for what you guys want to see in these meal plans, so there’s a little bit of everything: chicken, beef, pasta, and a touch of seafood. I’m also on a bit of an eastern food kick, so you’ll find a lot of my favorite takeout dishes on this list.
