With the holiday season fast approaching, my mind is constantly drifting to all the delicious foods that will surely be in my future – or, more accurately, all the foods I’ll soon be making for the first time. For those that might not now, part of the reason why I started this blog was to teach myself to cook, and so far it’s done exactly that (and amazingly well, if I do say so myself). But there’s just one small side effect that’s come with my new culinary prowess:
I now want to cook up everything I see. And I do mean all of it – if it can be cooked, baked, or fried, I’m already preheating my oven. Because somewhere along the line, cooking has become fun. I know, right? I’m as shocked as you are.
The only problem? I don’t have time (or enough hungry mouths to feed) to cook all the things. These days Pinterest leaves me with a serious case of food envy, because I just can’t justify whipping up four batches of muffins, three chicken dishes, and six pies in one day – but I so totally wish I could. I’m sure I’ll get to making all the good stuff as time goes by and opportunities arise, but for now, I make do by creating never-ending baking and cooking bucket lists that are seemingly endless.
… And that is my segue to today’s recipe roundup, because this list includes my top ten galette recipes that I will make one day. They are too absolutely amazing not to! Seriously, keep scrolling down – you’ll see what I mean.

A perfect blend of rustic and elegant. These galettes can be made with a variety of other fruit — apples, plums, berries, etc. So many delicious possibilities!
This blueberry lavender galette was meant to be and let me tell you, it was such a delicious idea. Words cannot possibly express how freaking delicious this galette is.
This rustic galette has a whole wheat crust, a fruity filling of apple sauce and apple slices and is finished with a maple glaze.
Don’t get me wrong, there is a time and place for pie, but today is all about the galette. And the crust (SO FLAKEY and topped with almonds + lavender sugar) and that filling (oh, just let me eat all the spring produce, please!).

I am obsessing over this galette because there is a cheesecake layer right under those figs. So you are basically eating a pie and a cheesecake all on one simple galette. What could be better?
This galette is pretty quick to prepare and is the perfect “prep in advance” meal for guests. It’s also equally perfect for “its Thursday night and I need some good food to get me through until 5pm tomorrow” food.
This is why I LOVE galettes. It has a rustic charm that just can’t be beat, and although people overdo the whole messy is rustic thing. This is a case where messy is truly beautiful, and I just love it.
It’s full of flavour, you won’t miss meat one bit! Galette is a basically a free-form tart, so easy to make and it’s charm is in how rustic it looks, which means there is no need to worry over making it just perfect!
I love love love galettes! They are so pretty and so elegant, perfect for a formal dinner or a real housewives marathon on the couch. HA! 😀

A galette has been on my must make list for eons, but I am slightly pastry challenged. These are all simply stunning. But I suppose I can use the word “rustic” to get away with one…because it won’t be pretty like these.
