About Chicken Penne Casserole
As we march into the second week of 2017, I’m sure I’m not the only one who’s still focused on making the most of the new year. New Year Resolution are the name of the game these days, and I’ve been doing my best to make the most of one goal in particular:
Cooking up more savory dishes at home.
I know that this might seem odd for someone like me (hello, little food blog!) but I still have my weaknesses. I still enjoy going out for a nice dinner with an old friend of mine. And if anything, I think we managed to spoil ourselves even more than normal last holiday season. Because you see, even though I didn’t really plan it this way, but my “winter vacation” also ended up being a “vacation from the kitchen.” So now more than ever I need to focus on getting us back on track with the home cooked meals.
Plus, there’s absolutely nothing better than a tasty meal that’s made from scratch and perfectly attuned to your tastes, amirite?!
And that, my friends, brings me to today’s post: This delicious Chicken Penne Casserole from Taste of Home’s new 100 Family Meals cookbook.
I recently picked up the 100 Family Meals cookbook as a way to help get our weekly dinners back on track, and let me tell you, the only thing I didn’t like about the book was that I could only pick one recipe to make first. Of course, This is no fault of the cookbook – the culprit is the size of our kitchen and my limited dish supply – but if I lived in a world where I could cook on the set of Hell’s Kitchen and have someone else do the dishes, I easily would have made at least twenty recipes in one day. As it stands now, I already know that I’ll be busy cooking for at least a month.
And that’s exactly the kind of foodie ammunition my 2017 New Years Resolution needs.
As for how this dish turned out?
Well, an old friend of mine and I loved it, but that doesn’t even really come close to describing just how good this dish was.
I think we can all agree that casseroles are great comfort food (especially this time of year) and it’s hard to have a casserole that’s not at least a little bit good. So, given that, I’ll bet a lot of you might be thinking, of course it was good – it’s a casserole. And, hey, I hear ya. Casseroles are indeed awesome!
However, I specifically chose this casserole because it is flavored with delicious peppers and onions – and that’s significant, because if you had asked an old friend of mine and I two years ago if we liked either of those veggies, we would have vehemently said no. I can’t tell you why we would have said no… but we would have. We had both written off peppers and onions long before we ever met, and whenever I cooked dinner for us, I avoided those ingredients.
But not this time!
Another part of my 2017 resolutions was to expand our diet and introduce some new foods.
So the fact that not only did an old friend of mine and I agree this was a delicious homemade casserole, but that it also included new foods for us to enjoy – and tasted even better because of it?
That’s a total New Year’s win in my book!
