Have you ever had an awesome idea but you’ve just never had the time or the patience or the means to get it done?
That’s exactly what’s it been like for me and these chocolate covered cherry popsicles.
I first had this idea during the 2015 holiday season while I was snacking on my all-time favorite holiday candy: chocolate covered cherries. Because that is seriously what I do all season long.. eat chocolate covered cherries. I have no shame in telling you that I could easily eat a whole box of those candies in one sitting.
And, in fact, that’s exactly what I do on a regular basis. I simply can’t stop myself and before I know it, the box is empty.
I mean, I regret the whole ordeal about an hour later, but at the time? It’s glorious.
So there I was, halfway through a fresh box of chocolate covered cherries and the foodie in me starts getting all emotional over the fact that pretty soon (read: January) these Queen Anne candies will no longer be predominately displayed at my local grocery store. In some cases, they might not even carry this candy at all, forcing me to go months and months and months before ever having another delectable chocolate covered cherry.
That, simply, would not do.
So being the genius that I am (ha!) I figured I would try to kill two birds with one stone:
Come up with a chocolate covered cherry recipe that could be enjoyed all year long. And for whatever reason (let’s blame the sugar high) making popsicles seemed like the perfect solution.
On the surface this seems like a pretty simple idea, but oh, how wrong I was. I originally tried to directly adapt a recipe for homemade chocolate covered cherries and it was, as they say, an epic fail. The popsciles never froze completely solid (which still boggles my mind) so when I tried to remove them from the molds all I ended up doing was pulling out the popsicle stick.
I had to repeat this process three times (because redheads are stubborn, didn’t you know?) before I accepted true failure. Before I knew it, January rolled around, and my goals of obtaining a year-long chocolate covered cherry fix went into the back of my notebook and has been collecting dust ever since.
… That is, until I found myself watching the isles at my local supermarket, waiting for all the school supplies to give away to more delicious boxes of Queen Anne. And then I remembered – I still had work to do!
I “fixed” this recipe by using a standard cream base, and overall it really helped the popsicles hold together that much better. The popsicles froze properly and they pulled out of the molds without a fight. Huzzah!
And as for the taste? I might be a little biased here, but I think I totally I nailed it. A perfect blend of creamy cherry and the crisp chocolate coating (using homemade chocolate magic shell) was the perfect touch. Plus, you can make these popsicles with any flavor of chocolate that you want: semi-sweet, bittersweet, dark chocolate, milk chocolate, white chocolate… all of them should work just as well.
Chocolate Covered Cherry Popsicles
Cherry and Cream Popsicles
- 18 oz maraschino cherries
- 1/3 cup maraschino syrup or water
- 1 1/2 cup heavy whipping cream
- 3 tbsp simple syrup * or honey or other liquid sweetener
- 1/2 tsp vanilla extract
Chocolate Magic Shell
- 4 oz chocolate any type
- 3 tbsp salted butter
Cherry and Cream Popsicles
- Place maraschino cherries and syrup into a food processor and blend until smooth. Set aside.
- In a medium bowl, whisk together heavy whipping cream, simple syrup, and vanilla extract until mixed.
- To assemble popsicles: start by spooning in 1-2 tablespoons of the blended cherries into each popsicle container, then add 3-4 tablespoons of the cream mixture. Repeat until all ingredients have been used. Tip: for the popsicles to have a more decorative look, make sure to drizzle some of the cherry mixture along the sides of the popsicle mold.
- Let popsicles chill in the freezer for 5 hours. To remove popsicles, dip the bottom half of the popsicle mold into warm water for 10-15 seconds, then gently pull on the popsicles until they come free.
Chocolate Magic Shell
- Heat chocolate and salted butter in the microwave (be sure it's a microwave safe bowl) for 30 seconds.
- Thoroughly stir the chocolate, then heat for another 30 seconds. Continue to do this until all of the chocolate has melted.
- Transfer to another bowl and let cool for 3-5 minutes or until sauce is close to room temperature but still liquid.
Putting it all together
- When popsicles are ready, spread out on a large plate or baking sheet. Drizzle chocolate magic shell on top, then wait 30 seconds - 1 minute for it to completely harden.
- Serve popsicles immediately.
