About Fruit Salad with Creamy Limoncello Dressing

For those of us trying to eat better in 2015, it can be hard to dress up all these good-for-you-foods. Not that there’s anything wrong with fish or fruit or veggies, but we’re only human – sometimes we like a little variety, and without it, we can get bored.

Boredom is where the trouble starts.

I eat cookies dipped in frosting when I’m bored.

I’ve said it before that I’m trying to eat better (not perfect, mind you, just better) and that means I’m trying to sprinkle in more of the good in with the bad. I’ve already tried two different fish recipes this year (both of which were awesome), but I knew I needed to find some new ways to curve my sweet tooth before I start baking up a storm again.

And don’t get me wrong, I still plan on baking quite a bit – because I’ve discovered while running this blog that I kinda sorta love it – but I just need to love it a little bit less. There has to be a way to curve a craving without all the calories, right?

So there I was, searching around for interesting recipes that included fruit, when I found this beauty.

And the pictures were gorgeous, sure, but what caught my attention was the cream sauce drizzled over it. What is that? Why do I already know it’s going to be good?

When I read the recipe, I wasn’t disappointed – that creamy sauce is a dressing laced with limoncello. For those that might not know, limoncello is a liquor that tastes just like a lemon drop candy.

My first thought when I read that?

This is a recipe for fruit drizzled with creamy, boozy candy.

Where do I sign up?

For the limoncello, you can either make your own (it takes up to a month, but so worth it) or you can just pick up some in the liquor section at your local grocery or ABC. I found mine sitting right next to the Midori. The bottle is bright yellow and pretty hard to miss.

As for the fruit, you can mix and match as you want. The original recipe calls for strawberries, raspberries, blackberries, orange slices, and kiwi. I could see grapes or honeydew or cantaloupe being a good addition to this recipe as well. If I were to make this again, I might skip the blackberries and add more melons. I love blackberries, I really do, but they tend to have a sharp taste when they’re not in season, which usually doesn’t come around until July here in the states.

But oh, blackberries make such a pretty picture, don’t they? I can almost forgive them for not being year round.

And even though there’s alcohol in this recipe, there wasn’t a sting to the taste – I could only taste the sweet lemon and yogurt in the dressing. I know this recipe is still cheating a little bit, but what can I say – it certainly cured my diet boredom!

Fruit Salad with Creamy Limoncello Dressing

Yields: 5 servings
A colorful fruit salad of strawberry, kiwi, orange, raspberry, and blackberry that's drizzled with a sweet, creamy dressing infused with limoncello!

Ingredients 

  • 1 pound strawberries, (standard box size in the produce section)
  • 6 ounce raspberries, (standard box size in the produce section)
  • 6 ounce blackberries, (standard box size in the produce section)
  • 1 cup mandarin orange slices, (6-8 oz) drained
  • 2-3 kiwis
  • 3 tablespoon limoncello
  • 1/2 cup greek yogurt, plain
  • 1 tablespoon lemon juice
  • 1 tablespoon honey, can use other types of sweeteners if desired, like powdered sugar

Instructions

  • Prepare the fruit: rinse all fruit with warm water (except for oranges), hull and half the strawberries, and peel and cut the kiwis.
  • Place all of the fruit in a large bowl. Add 1 tablespoon of the limoncello and gently toss to coat. Set aside.
  • In a small bowl, add remaining 2 tablespoons of limoncello, greek yogurt, lemon juice, and honey (or sweetener of your choice). Whisk together until dressing is smooth.
  • Serve fruit salad in individual bowls and drizzle limoncello dressing on top.
