A few weeks ago an old friend of mine and I rented an RV, packed it all our stuff, loaded up the dogs (yes, all four of them), and took a 20-hour road trip to a tiny rural town outside of Houston, Texas. We were there visiting his mother (and my new mother-in-law, as of last September) and her an old friend of mine to belatedly celebrate the holidays.

The whole trip was quite the endeavour, but it was only fair we travel cross country – they’ve made the same journey to our house for the past two years.

Aside from the actual drive (which was rough, to put it mildly – those RV’s are not made for traveling in comfort), our actual stay in Texas was easy and restful. We did take one day trip to Galveston (so that I could see the ocean), but otherwise, we mostly hung around the house, playing board games and watching the dogs play.

But the best part?

One on one of those stay-at-home days, my mother-in-law let me raid her recipe stash.

Now, up until this point in the trip, we’d already talked a great deal about cooking, particularly about a fruit pizza recipe she used to make when an old friend of mine was a kid – but alas, she was certain the recipe was lost. I tried searching around on Pinterest for a similar recipe, but she kept shaking her head, insisting the recipes I showed her weren’t like the one she remembered. It seems the “newer” recipes were all too complicated or used the wrong sugar.

By the end of the week, we had both given up on the idea of ever making her fruit pizza again ..  until she was hunting through some old cookbooks and the fruit pizza recipe card fell out.

So, there we were, with the full recipe for the Mythical Fruit Pizza of Legendary Awesomness back in our possession…  and there was really only one thing to do:

Bake that fruit pizza ASAP!

Thankfully I remembered to bring my photography equipment (thank you, RV, for all the extra storage!) because, you guys – this fruit pizza lived up to every bit of the hype.

I’m so happy I could capture this moment…  and, no joke, it was “just” a moment – my mother-in-law and I practically devoured this fruit pizza all by ourselves.

Our an old friend of mines were only able to sneak a slice because they came home at just the right time.

What I love most about this recipe: it can be different every time you make it.

You can use any type of fruit you want, and you can use any type of fruit juice to make the fruit pizza glaze, resulting in a completely different taste each time.

And since it’s chilled and the fruit is “sealed” by the glaze, it’s the perfect treat to bring to parties.

Glazed Fruit Pizza

Make fruit pizza your way with a sweet cream cheese "sauce', fruits of your choice, and a glaze made out of your favorite fruit juice.
Prep: 15 minutes
Cook: 20 minutes
Calories: 545 kcal
Yields: 8 slices

Ingredients

  • 1/2 cup powdered sugar
  • 3/4 cup unsalted butter softened
  • 1 1/2 cup all-purpose flour
  • 8 oz cream cheese softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 1/2 cups fruit any type
  • 2 1/2 tsp cornstarch
  • 1 cup fruit juice *
  • 3/4 cup sugar
  • 1 tsp lemon juice

Instructions

  1. Preheat oven to 350 F. Spray a flat and shallow 9x9 baking dish (9-12 inches wide) with cooking spray.

  2. Add powdered sugar, unsalted butter, and all-purpose flour and mix together (don't be afraid to use your hands!).
  3. Once dough is incorporated, place in prepared baking dish. Flatten dough into and even layer, leaving a slight lip of dough around the edges of the dish.
  4. Bake sugar cookie crust for 20 minutes. Allow to cool.
  5. Using a stand mixer (or hand mixer + medium bowl), beat the cream cheese, granulated sugar, and vanilla extract together on high. Cover and set aside while crust cools.

  6. If needed or desired, cut up your chosen fruit so that it will lay flat on the fruit pizza. Set aside.
  7. When sugar crust as cooled, spread cream cheese mixture on top of crust. Arrange fruit on top. Set aside.
  8. In a small saucepan over medium heat, add cornstarch, fruit juice *, sugar, and lemon juice. Bring to a boil, stirring constantly, until thick.

  9. Pour fruit juice glaze on top of the fruit pizza, making sure to cover all of the fruit.
  10. Refrigerate at least 1 hour before serving.

Recipe Notes

* For the fruit juice, you can use any clear (no pulp) juice. A good example would be apple juice. If you're using canned fruit, you can even use the syrup from the can. Don't be afraid to try different flavor combinations - it will make your fruit pizza a little different every time!

    That is one gorgeous fruit pizza! I can see my little girl totally falling in love with this and it’s perfect for this time as I feel like it’s spring in the midst of winter when I see this! Super yum!!!

    This story is so similar to mine, in that I have searched my recipes and cant find my copy, which is what brought me to find this online. I tried one last yr in replacement and it was jus4 not right. This one sounds so similar to the recipe I got from my family 30 yrs ago. Im going to try this one and compare.
