If there’s anything we can agree on, it’s that everything always tastes better with bacon. It’s the magical food that makes everything amazing, and that’s exactly how it worked with these Brussels sprouts.

Because what better way is there to eat your greens than with a hearty dose of tasty meat and sweet maple syrup?

After having these brussel sprouts with bacon and maple syrup, I sure don’t know of a better way!

Is it “Brussel Sprouts” or “Brussels Sprouts”?

These round green veggies are from Brussels, and they’re named after the city – which makes the correct pronunciation “Brussels Sprouts.”

However, this can feel awkward to say, since it sounds like a double plural. 70% of people drop the “s” from Brussels for this reason, and if you do it, too, worry not – everyone will still know what you mean.

Can you make maple bacon brussels sprouts in advance?

Overall, this is a dish that is best baked right before eating. If you’d like to get ahead in cooking, you can prep the following up to 24 hours before cooking:

  • Prepare the Brussels sprouts by removing the stems and leaves, if needed, and storing them in the refrigerator until ready to bake. Not sure how to trim Brussels sprouts? Check out this guide: How to Trim and Cut Brussels Sprouts.
  • Bake the bacon per recipe instructions, cut it into pieces, and store in the refrigerator in a sealed container until ready to use. When ready to use, you’ll need to heat the bacon up again. Note: this does mean you’ll lose the grease on the baking sheet (some loss of flavor), and the bacon may soften some while stored in the refrigerator.

How long are roasted Brussels sprouts good for?

Once prepared, these roasted Brussels sprouts with bacon and maple syrup can be stored in the refrigerator in a sealed container for up to four days.

To reheat: Lightly oil a baking sheet (cooking spray is okay) and evenly spread out roasted Brussels. Reheat in the oven at 350 degrees F for 5-8 minutes. They can also be heated in the microwave for 30 seconds to one minute, but the bacon and Brussels sprouts may become chewy or soggy with this method.

Can roasted Brussels sprouts be frozen?

Because of how tender the Brussels sprouts become once baked, I can’t recommend freezing this dish. The veggies will be soggy and have a mushy texture upon thawing.

How to make roasted maple bacon Brussels sprouts

Step 1 – Line a baking sheet with aluminum foil, then lay a few pieces of bacon across it.

Step 2 – Bake the bacon, then transfer it to a paper towel lined plate. Once it’s cool, cut the bacon up into small pieces, then set aside.

Step 3 – Using the same pan you cooked the bacon on, add the Brussels sprouts. Drizzle with olive oil and season with salt and pepper to taste, then use a spatula to toss the sprouts in the oil, seasons, and bacon grease.

Step 4 – Bake!

Step 5 – Add the crumbled bacon to the baking sheet with the Brussels sprouts and drizzle with maple syrup. Use a spatula to toss all of the ingredients together, coating the sprouts and bacon with syrup.

Step 6 – Serve and enjoy!

Maple Bacon Brussels Sprouts

Yields: 4 servings
Oven-roasted Brussels sprouts flavored with crispy bacon and sweet maple syrup. It’s an easy side dish to whip up for any dinner or holiday!


  • 6 slices maple bacon
  • 2 pound Brussels sprouts, stems and loose leaves removed, cut in half
  • 2 tablespoon olive oil
  • 1 pinch salt, to taste
  • 1 pinch black pepper, to taste
  • 2 tablespoon maple syrup


  • Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil.
  • Arrange bacon slices on prepared baking sheet in a single layer so that no slices are touching.
  • Bake bacon for 15-20 minutes, turning pan halfway through cook time. Bacon should be browned and crisp when done. Transfer bacon to a paper towel lined plate to cool. Do not discard bacon grease or clean baking sheet; it will be used in the next step.
  • Preheat oven to 425 degrees F.
  • Add Brussels sprouts to baking sheet with the bacon grease. Drizzle with olive oil and season with salt and pepper to taste. Use a spatula to mix and coat Brussel sprouts evenly.
  • Bake Brussels sprouts for 20 minutes, tossing halfway through cook time.
  • Remove Brussels sprouts from oven. While pan is still warm, chop up cooled bacon and pour over cooked Brussels sprouts. Drizzle maple syrup on top, then toss to mix ingredients together.
  • Serve Brussels sprouts immediately.

    Thank you so much for this delicious recipe. I do not like brussel sprouts, I saw this recipe & thought it would be a great way for me to eat them. My husband & I love this recipe. The brussel sprouts are delicious with the Maple syrup & bacon. Yummy!

    A great recipe. I make these all the time; except I use turkey bacon and I chop up the bacon with the brussel sprouts to cook and add the maple syrup just before they’re completely done, so that the sweetness also bakes in, and then I take them out.
