About Maple Bacon Brussels Sprouts
If there’s anything we can agree on, it’s that everything always tastes better with bacon. It’s the magical food that makes everything amazing, and that’s exactly how it worked with these Brussels sprouts.
Because what better way is there to eat your greens than with a hearty dose of tasty meat and sweet maple syrup?
After having these Brussels sprouts with bacon, I sure don’t know of a better way!
Brussels sprouts tend get a bad rap, but honestly, I couldn’t tell you why. I mean, yes, they’re green, and yes, food of that color tends to be kryptonite to anyone under the age of 10, but I was surprised how many adults are still leery of Brussels sprouts.
I never had the opportunity to try these green beauties as a kid, so (for once!) I didn’t have a lot of baggage holding me back from trying them. Experiencing them for the first time as an adult, my first thought was… these taste like leafy cauliflower.
Which, in my world, is a pretty awesome thing.
But then came the bacon.
Followed by the maple syrup.
And suddenly I’ve found my new favorite dinner lunch side dish.
Plus, I love that this is a dish that’s essentially made in one pan.
The bacon is baked in the oven, meaning you don’t need to worry about dirtying up a frying pan or getting hit with splashes of bacon grease (because I don’t know about you, but that always happens to me at least half a dozen times.)
The Brussels sprouts are then cooked in the same pan as the bacon, right in the bacon grease, bringing out all that delicious fried piggy flavor.
And once you drizzle the sweet maple syrup on top, you’ll be wondering where this was back when you were seven years old.

Maple Bacon Brussels Sprouts
Oven-roasted Brussels sprouts flavored with crispy bacon and sweet maple syrup. It's an easy side dish to whip up for any dinner or holiday!

Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil.
Arrange bacon slices on prepared baking sheet in a single layer so that no slices are touching.
Bake bacon for 15-20 minutes, turning pan halfway through cook time. Bacon should be browned and crisp when done. Transfer bacon to a paper towel lined plate to cool. Do not discard bacon grease or clean baking sheet; it will be used in the next step.
Preheat oven to 425 degrees F.
Add Brussels sprouts to baking sheet with the bacon grease. Drizzle with olive oil and season with salt and pepper to taste. Use a spatula to mix and coat Brussel sprouts evenly.
Bake Brussels sprouts for 20 minutes, tossing halfway through cook time.
Remove Brussels sprouts from oven. While pan is still warm, chop up cooled bacon and pour over cooked Brussels sprouts. Drizzle maple syrup on top, then toss to mix ingredients together.
Serve Brussels sprouts immediately.
