How to make pumpkin Rice Krispies treats

Step 1 – In a large saucepan, toss in some of the butter and heat until completely melted. Add the marshmallows and maple extract, then mix until smooth.

Step 2 – Remove the saucepan from heat, pour in some of the Rice Krispies cereal, then mix well.

Step 3 – Add the Rice Krispies treat mixture to a parchment paper or aluminum foil lined 9-inch round cake pan. This batch will act as a “crust,” so it should only line the outside edge of the cake pan (roughly one inch thick) and leave the middle clear. Use another piece of parchment paper to gently press the mixture into the pan (not too hard) to create an even, uniform edge around the pan. Once done, set the pan aside.

Step 4 – In a large saucepan (you can use the same one as before) toss in the remaining butter and heat until completely melted. Add the remaining marshmallows, pumpkin pie spice, and a few drops of orange food coloring, then mix until smooth.

Step 5 – Remove the saucepan from heat, pour in the rest of the Rice Krispies cereal, then mix well.

Step 6 – Add the Rice Krispies treat mixture to the cake pan. This batch is the “pie filling,” so it should go in the middle of the pan, inside the “crust” ring that was created earlier. Press the “filling” into an even, uniform layer that completely fills the middle area within the “crust.”

Step 7 – Let set!

Perfect for the holidays, these pumpkin-spice-infused Rice Krispies treats are shaped like a classic pumpkin pie. A fun (and easy!) twist on a familiar dessert!

Ingredients

  • 1/4 cup salted butter, divided
  • 5 1/2 cups marshmallows, divided
  • 1 teaspoon maple extract
  • 7 cups Rice Krispies cereal, divided
  • 2 teaspoons pumpkin pie spice

Instructions

  • Line a 9-inch round cake pan with parchment paper or aluminum foil, extending pieces over sides for easy handling. Spray inside with cooking spray, then set aside.
  • In a large saucepan over low heat, melt 1 1/2 tablespoons butter.

  • Add 2 1/4 cups marshmallows, then stir until melted, about 3-5 minutes.
