About Red, White, and Blue Strawberries

Everyone loves a decorated strawberry, and these red, white, and blue strawberries are perfect for any holiday, event, or occasion. They’re perfect for warm, summer months when strawberries are in season, but can still be a simple dessert that can be decorated with festive sprinkles all year-round.

What type of candy melts should you use?

Candy melts (also called melting wafters) are pretty common – you can find them in the baking supply area, and they’re small, flat disks, typically sold by the bag – but I do think there are significant differences in quality depending on the brand of candy melts you buy.

Wilton is by far the most common brand of candy melt, and they are sold in a variety of colors. This makes them a popular pick, since you can buy the exact color you need and can get right to crafting your creepy treats. Wilton is simple and easy.

However, I’ve not been impressed with the quality of Wilton candy melts. These candy melts cool fast, which means it becomes thick and harder to use long before you’ve coated all your treats. This leads to them being reheated and the texture and the texture of the melts becomes a little more “iffy” each time.

Given the above, I would highly recommend picking up Ghirardelli brand candy melts instead. These are my favorite candy melts to work with due to the superior quality and taste. These candy melts also come in a brilliant white color, making them perfect for this recipe.

What type of sprinkles should you use?

To recreate the look in this recipe, you should use nonpareils sprinkles. These are the small, bead-like sprinkles and have a firm, crunchy texture. You can buy some nonpareils like the ones pictured here: 4th of July Nonpareil Sprinkles.

You should also use other types of shaped candy sprinkles (stars, circles, etc) or even sanding sugar (which has the texture of granulated sugar but comes in different colors).

How long do red, white, and blue strawberries last?

Once prepared, these white candy-coated strawberries should last up to two days in a sealed container the refrigerator. However, there are a couple of things to keep in mind:

  • If possible, plan on eating these strawberries the same day that they’re parepared. They’ll most likely be eaten fast, anyway.
  • For storing the strawberries, it is best to keep them in the refrigerator, to ensure that the strawberries stay fresh for as long as possible. BUT, there are some disadvantages to this, namely that the strawberries will “sweat” some going from chilled to room temperature, which can impact decorations.
  • Because this recipe uses candy melts, they can be stored in a sealed container at room temperature. However, if you use white chocolate to coat the strawberries (whether it be chopping up a candy bar, melting white chocolate chips, etc) they should be refrigerated.

Can you freeze candy-coated strawberries?

Yes, you totally can! But, you should only freeze them for long-term storage. If you plan on eating the strawberries within a day or so, freezing them is not recommended, as the fruit will become rock-hard and unable to be bitten into.

To freeze strawberries, preserve the decorations by either wrapping each strawberry in plastic wrap or separating single layers of strawberries with wax paper. Place the strawberries in a sealed container or freezer bag.

Strawberries can be frozen for up to three months.

Notes & tips for white chocolate strawberries

  • When cleaning and preparing the strawberries, keep the stems. It will make them easier to handle for both decorating and eating.
  • Make sure strawberries are completely dry before decorating. Any excess moisture could cause the candy melt to seize and not stick to the strawberry.

How to make red, white, and blue strawberries

Step 1 – Before getting to work, make sure the strawberries are washed and dried, that you have a baking sheet or large plate topped with wax paper nearby, and that your chosen sprinkles are in a small bowl.

Step 2 – Heat up the white candy melts per the package instructions, heating and mixing until nice and smooth.

Step 3 – Dip the strawberries in the white candy melts, coating them about 2/3 of the way. Quickly dip the coated strawberry into the sprinkles, covering it about 1/2 way (so a line of white is still visible above the sprinkles). Repeat this step until all the strawberries are decorated.

Step 4 – Let the coating on the strawberries dry for about 30 minutes.

Step 5 – Serve and enjoy!

  • Prepare your work area by lining a large baking sheet or plate with wax paper. Place sprinkles in a small bowl and set nearby.
  • In a microwave-safe bowl, melt candy melts per package directions until smooth.
  • Dip strawberries about 2/3 of the way into the melted candy and then immediately dip them 1/4 of the way into the sprinkles. Once decorated, place strawberry on prepared baking sheet or plate. Repeat this step until all strawberries are coated.
  • Let strawberries dry for at least 30 minutes before serving. If needed, strawberries can be placed in the refrigrator to speed up set time.
