About Strawberry, Kiwi, and Granola Breakfast Popsicles
As we come to the end of summer, I’ve found I have two major goals for the months ahead:
1 – Getting my hands on as much fresh summer fruit as possible, and finding creative ways to preserve and enjoy them throughout the cooler months.
2 – Come up with easy and tasty snacks that I can make in advance, since I always seem to be the busiest in the fall and winter months.
So, with these in mind, I immediately thought of strawberries – because who doesn’t love a fresh batch of strawberries in summer? – and then next up was focusing on an easy solution for breakfast. I don’t know what it is, but I always have a hard time making plans for the first meal of the day, and the struggle only gets more real as my days become fuller.
I was still mulling over this dilemma while I was browsing through Target, and when I pulled up the Cartwheel app, I noticed this deal for Vans Simply Delicious Granola and Wallaby Organic Greek Yogurt.
(By the way, if you don’t already have Cartwheel, I highly recommend it – it’s a free app for getting on-the-spot discounts at Target. Because who doesn’t like to save money, amirite?)
But to get back to the deal: once I saw the products listed, inspiration struck. I knew exactly what I could make that would both use fresh fruit and give me a wholesome solution to start my day, so I headed over to the cereal aisle (for Van’s Simply Delicious Granola) and the yogurt section (for Wallaby Oragnic Greek Yogurt) and picked up the products I needed.
When it came to executing my brilliant breakfast solution, I zeroed in on two flavors: Double Chocolate granola and Strawberry Greek yogurt.
They turned out to be the perfect ingredients for making delicious these Breakfast Popsicles.
And to make these delicious popsicles even better, I added some fresh strawberries and kiwi. You can make these popsicles with any type of fruit, Greek yogurt, and granola flavor you prefer, but for me, I wanted to keep with capturing the spirit of summer, so this combination was the ideal fit.
Chocolate and strawberries are always a great combo, but the kiwi added just the right amount of texture and sweetness.

Strawberry, Kiwi, and Granola Breakfast Popsicles
- In a small bowl, mix together Wallaby Organic Strawberry Greek Yogurt, milk, and honey until smooth.
- Fill up popsicle molds about halfway with yogurt milk mixture. Add fruit and Van's Simple Delicious™ Gluten Free Double Chocolate to molds as desired, using a butter knife to move ingredients around. Fill molds with remaining yogurt milk mixture until molds are full. Use butter knife to gently make any adjustments if desired.
- Place molds in the freezer for one hour, then insert popsicle sticks. Freeze for another 4-6 hours or until solid.
- To remove popsicles, dip molds in hot water for 10-15 seconds, then gently pull to remove popsicles. Popsicles should remove easily; if there's too much resistance, dip the molds in hot water for another 5-10 seconds.
