THE BEST 3 BEAN SALAD

Perfect for outdoor summer parties, this semi-sweet and colorful 3 bean salad is super easy to whip up and a great go-to side dish that fits in any meal.
‣ 1/2 cup red onion, chopped ‣ 1 cup red wine vinegar ‣ 3/4 cup granulated sugar ‣ 1/2 cup olive oil ‣ 1 pinch salt, to taste ‣ 1 pinch black pepper, to taste ‣ 15 ounce red kidney beans, rinsed and drained ‣ 15 ounce cannellini beans, rinsed and drained ‣ 2 cup shelled edamame ‣ 1/4 cup fresh parsley, chopped
In a medium bowl, add the red wine vinegar, sugar, olive oil, and salt and pepper to taste. Give it a good whisk, mixing until the sugar is dissolved.
MIX THE DRESSING
In a large bowl, red kidney beans, add the edamame, cannellini beans, red onion, and parsley.
MIX THE INGREDIENTS
POUR ON THE DRESSING
Pour the dressing on top, then mix it well. Cover the bowl and let it chill and marinate for 3 to 5 hours.
