Dark Chocolate Guinness Bread ‣ 1 1/2 cup all-purpose flour ‣ 1/4 cup unsweetened cocoa powder ‣ 1 teaspoon baking soda ‣ 1/2 teaspoon salt ‣ 1/4 teaspoon white pepper ‣ 1/2 cup semi-sweet chocolate chips ‣ 1/2 cup walnuts, chopped ‣ 1/2 cup unsalted butter, softened ‣ 1/2 cup dark brown sugar, packed ‣ 1 egg ‣ 1 cup Guinness Baileys Glaze ‣ 1 1/4 cup powdered sugar ‣ 2 tablespoon Baileys Irish Cream ‣ teaspoon half and half cream
1
In a large bowl, whisk together all of the dry ingredients: flour, cocoa powder, baking soda, salt, and white pepper.
2
Using a stand mixer (or hand mixer + large bowl), whip together the butter and brown sugar. Add the egg, then mix again.
3
Pour in the Guinness beer, then mix again.
4
Add the dry ingredients to the bowl with the butter, sugar, and egg, then mix.
5
Add the chocolate chips and walnuts to the batter, then use a spatula fold them in.
6
Spray a 9x5 bread loaf pan with cooking spray, then pour the bread batter in. Use a spatula to smooth out the top into a single layer. Once done, bake!
7
While the baked bread cools, prepare the Baileys glaze by adding powdered sugar, Baileys Irish Cream, and half and half to a small bowl, then whisk them all together.
8
Drizzle the Baileys glaze over the baked bread as you see fit.
