SLOW COOKER CABBAGE ROLL SOUP

This easy crock pot cabbage roll soup gives you all the flavor of a cabbage roll but for a fraction of the work. Just fill the pot, let it simmer, then eat!

INGREDIENTS

‣ 1 tablespoon olive oil ‣ 1 pound ground beef ‣ 1 cup yellow onion, chopped ‣ 2 tablespoon Worcestershire sauce ‣ 2 teaspoon fresh garlic, minced ‣ 1 teaspoon paprika ‣ 5 cup cabbage, cut into 1/2 inch strips ‣ 6 cup reduced sodium beef broth, or up to 7 cups ‣ 14.5 ounce diced fire roasted diced tomatoes, undrained ‣ 1 cup vegetable juice, mild or hot ‣ 2/3 cup long grain white rice, uncooked ‣ 2 tablespoon tomato paste ‣ 1/2 teaspoon ground allspice ‣ 1 pinch salt, to taste ‣ 1 pinch black pepper, to taste ‣ fresh parsley, chopped, for garnish (optional)

In a wide skillet, warm up the olive oil until nice and hot, then add the ground beef, onion, Worcestershire sauce, garlic, and paprika. Cook and crumble the ground beef until no longer pink. Drain the excess grease.

COOK THE GROUND BEEF

In a 6 quart crock pot, toss in the following ingredients: cabbage, beef broth, fire-roasted tomatoes, vegetable juice, rice tomato paste, allspice, salt, and pepper. Top with the beef mixture, then stir. Once done, cook!
