This tender and flavorful crock pot cranberry pork tenderloin is slowly cooked to perfection in a citrus cranberry sauce. Great for holidays or easy dinners!
‣ 3 pound pork tenderloin ‣ 1 tablespoon olive oil ‣ 1 teaspoon salt ‣ 1/2 teaspoon black pepper ‣ 16 ounce whole berry cranberry sauce ‣ 1/2 cup orange juice ‣ 1/4 cup light brown sugar, packed ‣ 1/2 teaspoon orange zest ‣ 1 pinch ground cloves ‣ orange slices, for garnish (optional) ‣ fresh thyme, for garnish (optional)

In a medium bowl, whisk together the cranberry sauce, orange juice, brown sugar, orange zest, and a pinch of cloves.

Heat some olive oil in a large, wide skillet. Season the pork tenderloin with salt and pepper, then sear all of its sides.

Place the seared pork tenderloin in your crock pot, then drizzle the cranberry sauce on top. Use a spoon to move the sauce around, covering the pork as much as you can.
