Sweetly tart and with a delicate crunch of walnuts, this fresh cranberry orange relish is an ideal topping for meats, pastries, or just spread on toasted bread.
‣ 12 ounce cranberries, fresh or frozen ‣ 1 medium orange, cut into small wedges (with rind), seeds removed ‣ 1 1/2 cup granulated sugar, or more or less to taste ‣ 1/4 cup walnuts, finely chopped
In a food processor, add the fresh cranberries and chopped up orange. Blend until the fruit is chopped but still a tad chunky.
Add the chopped fruit to a large bowl, then pour in the sugar and walnuts. Use a spatula to gently blend everything together until the sugar has dissolved into the juices of the fruit.
