GLORIFIED RICE

This upper midwestern dessert salad is a unique mix of cooked rice, cool whip, marshmallows, fruit cocktail, and crushed pineapple. And it really is delicious!

INGREDIENTS

‣ 1 cup white rice, uncooked ‣ 1 cup water ‣ 1 cup pineapple juice, see notes ‣ 8 ounce Cool Whip, softened ‣ 1 cup miniature marshmallows, plain or multicolored ‣ 15 oz fruit cocktail, (1 can) drained and juice kept (see notes) ‣ 8 oz crushed pineapple, (1 can) drained and juice kept (see notes) ‣ maraschino cherries, for garnish (optional)

Start off by preparing the rice per the package instructions. You can either cook the rice in water OR you can do a 50/50 split of water and fruit juice for an extra dose of flavor. Once the rice is cooked, drain any excess fluid and set it aside to cool completely.

MAKE THE RICE

In a large mixing bowl, add the cooled rice, cool whipped, mini marshmallows, fruit cocktail, and crushed pineapple.

ADD THE INGREDIENTS

Use a spatula to toss and mix the ingredients together until everything is coated in cream.
