GRINCH SUGAR COOKIE TRUFFLES

These fun grinch sugar cookie truffles are made with crumbled sugar cookies, coated in light green candy, and decorated with a three-sizes-too-small heart.

INGREDIENTS

‣ 16 plain sugar cookies, firm or chewy, not soft, about 2 1/2 inch diameter ‣ 8 ounces cream cheese, softened ‣ 1/4 cup Christmas sprinkles, optional ‣ 1 pound light green candy melts ‣ heart sprinkles

Using a food processor, pulse the sugar cookies until they’re nice and crumbly. Toss the cream cheese into the food processor, then mix until combined.

MIX THE FILLING

Turn off the mixer and use a spatula to fold in the Christmas sprinkles. Once done, cover the bowl and send it off to chill until firm.

ADD SOME SPRINKLES

Using a cookie scoop or ice cream scoop, scrape out about one tablespoon worth of truffle mixture (or whatever size you’d like your truffles to be) and place it in your hands. Roll it into a ball, then place the finished ball on the nearby baking sheet. Once done, chill them a bit more.

ROLL INTO TRUFFLES

Melt the candy melts in a microwave-safe bowl until nice and smooth.

MELT THE COATING

Using a spiral dipping tool (or just a fork) dip the truffles into the candy mixture, coating them, then place them back on the baking sheet. Decorate each truffle with a small heart sprinkle while the candy is still wet.
