This Kentucky bourbon pie is a southern classic, made with a creamy mix of chocolate chips and pecans. Perfect for serving during spring events like the Derby.
‣ 1 unbaked pie crust, (9 inch) ‣ 4 large eggs ‣ 3/4 cup light brown sugar ‣ 3/4 cup light corn syrup ‣ 1/2 cup all-purpose flour ‣ 1/2 cup salted butter, melted and cooled ‣ 1/4 cup granulated sugar ‣ 2 tablespoon bourbon ‣ 1 teaspoon vanilla extract ‣ 1 cup semi-sweet chocolate chips ‣ 1/2 cup chopped pecans

Using a stand mixer, add eggs, brown sugar, corn syrup, flour, melted butter, sugar, bourbon, and vanilla extract to the bowl. Gently blend together until the egg yolks are broken and the flour is mostly incorporated.

Remove the bowl from the mixer, then pour in chocolate chips and pecans. Use a spatula to gently fold everything together.

Pour the prepared pie mixture into an unbaked pie crust. If needed, use the spatula to evenly spread out the chocolate chips and pecans. Once finished, set it in the oven to bake!
