This refreshingly delicious lemon bread is baked to soft cake-like perfection and topped with a shell of homemade lemon glaze. Perfect for snacking or gifting!

INGREDIENTS

Lemon Bread ‣ 2 cups all-purpose flour ‣ 1 teaspoon baking powder ‣ 1/4 teaspoon baking soda ‣ 1/2 teaspoon salt ‣ 1 cup granulated sugar ‣ 1/2 cup olive oil ‣ 1/4 cup milk ‣ 2 eggs ‣ 1 teaspoon vanilla extract ‣ 1 teaspoon lemon extract ‣ 2 tablespoons lemon zest Lemon Glaze ‣ 1 cup powdered sugar ‣ 1/4 cup lemon juice ‣ 1 tablespoon lemon zest, plus more for garnish (optional)

In a large bowl, whisk together all of the dry ingredients: flour, baking powder, baking soda, and salt. Set this bowl aside for now.

MIX DRY INGREDIENTS

Using a stand mixer (or hand mixer + large bowl), whip together the sugar, olive oil, milk, eggs, vanilla extract, and lemon extract until smooth.

WHIP THE OTHER INGREDIENTS

Add the dry ingredients to the bowl, then mix well. Add the lemon zest, then use a spatula to fold it into the batter.

COMBINE THE BATTER

Spray a 9x5 bread loaf pan with baking spray, then pour the bread batter in. Use a spatula to smooth out the top into a single layer. Once done, send it off to bake!

While the baked bread cools, prepare the lemon glaze by adding powdered sugar, lemon juice, and lemon zest to a small bowl, then whisk them all together.

MAKE THE GLAZE

Drizzle the lemon glaze over the baked bread as you see fit.
