This classic and delicious no-bake cheesecake paired with an easy spiderweb design is an easy way to add a little sweetness to your Halloween festivities.
‣ 35 Oreos ‣ 5 tablespoons unsalted butter, melted ‣ 16 ounces cream cheese, softened ‣ 1/2 cup granulated sugar ‣ 2 teaspoons lemon juice ‣ 2 teaspoons vanilla extract ‣ 1 cup heavy whipping cream, very cold ‣ 1/4 cup dark chocolate chips
In a food processor, toss in the Oreos and pulse until they’re nice and crumbly. Once done, transfer the crumbled cookies to a new bowl.
Add the butter to the Oreos and mix until the crumbled cookies are saturated.
Press the Oreo mixture into the bottom of a springform pan. TIP: Use the bottom of a measuring cup to press the crust down into a nice even layer. Once done, transfer the springform pan to the freezer while you prepare the cheesecake filling.
Using a stand mixer (or hand mixer + large bowl), whip together the cream cheese, sugar, lemon juice, and vanilla until combined and creamy. In a separate bowl, whip the heavy cream on high speed until stiff peaks form.
Combine the cheesecake mixture and the whipped cream, then use a spatula to gently fold them together.
Grab the springform pan from the freezer, then pour the cheesecake mixture on top of the crust. Use the spatula to smooth out the top.
Place the dark chocolate chips in a microwave-safe bowl and heat in the microwave until smooth. Let the chocolate cool for 10 minutes.
Transfer the melted chocolate to a pastry bag with a small, round tip and begin decorating the cheesecake. Draw a small, bean-sized dot in the center of the cheesecake, then draw a circle around itt, spacing them about one to two inches apart. Keep drawing larger circles until you have 6-8 rings.
To complete the spiderweb look, use a toothpick and lightly drag a straight line along the top of the cheesecake, going from the center of the cheesecake to the edge. Repeat this step until you’ve made about eight straight lines.
