These perfectly fluffy pancakes have a delicious hint of peanut butter flavor, making them a perfect match for tasty additions like chocolate, bananas, or both!
‣ 1/3 cup creamy peanut butter, plus more for drizzling (optional) ‣ 1 cup all-purpose flour ‣ 2 tablespoon baking powder ‣ 2 tablespoon granulated sugar ‣ 1/2 teaspoon salt ‣ 1 1/4 cup whole milk ‣ 1 large egg ‣ 1 tablespoon vegetable oil ‣ chocolate sauce, for drizzling (optional) ‣ peanut butter cups, chopped for garnish (optional)

In a large bowl, mix the dry ingredients together: flour, baking powder, sugar, and salt.
Melt the peanut butter until it has the consistency of a velvety sauce. Using a measuring cup (for easy pouring) or a medium bowl, use a whisk to mix up the milk, egg, and vegetable oil. While continuing to whisk, gently pour the melted peanut butter in with the egg mixture.

Add in the dry ingredients, mixing until the batter is combined but still lumpy. Allow the batter to rest for 10 minutes. This will give you time to heat your griddle to 275 degrees F.

Scoop up some batter and pour it onto the hot griddle. Cook until the top of the pancake begins to bubble and the bottom is golden brown, then flip and cook for an additional minute.
