‣ 2 cups whole milk ‣ 1 1/2 cups heavy whipping cream ‣ 1 cup granulated sugar ‣ 1 cup pumpkin puree ‣ 4 egg yolks ‣ 2 teaspoons vanilla extract ‣ 2 teaspoons pumpkin pie spice ‣ 5 tablespoons cornstarch
In a large saucepan, heat milk and heavy whipping cream until hot to the touch.
Whisk in the sugar, pumpkin puree, egg yolks, vanilla, and pumpkin pie spice until all of the ingredients are dissolved or incorporated.
Add the cornstarch, then keep on whisking until the pudding is thick and beings to simmer.
Remove the saucepan from heat to cool slightly, then transfer the pudding to a serving bowl. Cover the bowl with plastic wrap and then transfer to the refrigerator for 1 hour.
