‣ 1 tablespoon salted butter ‣ 1/4 cup white onion, finely chopped ‣ 2 teaspoon fresh garlic, minced ‣ 2 1/2 cup shredded cheddar cheese, (see recipe notes) ‣ 13 ounce evaporated milk ‣ 1 cup tomato, diced, plus more for garnish ‣ 4 ounce fire roasted green chiles, chopped (more or less to taste) ‣ 2 tablespoon milk ‣ 1 tablespoon all-purpose flour ‣ 1 pinch salt, to taste ‣ 1 pinch black pepper, to taste
In a medium saucepan, melt the butter and cook the white onion and garlic until tender and fragrant.

Add the cheese and the evaporated milk.

Toss in the tomato, chiles, milk, flour, and salt and pepper (to taste) to saucepan, then cook and stir until the cheese is melted and creamy.
