These iconic and simple slice and bake cookies have slightly crisp corners, a soft center, and are easy to customize for any holiday, season, or occasion.
‣ 1 cup salted butter, softened ‣ 1/2 cup granulated sugar ‣ 1/2 cup light brown sugar, packed ‣ 1 large egg yolk ‣ 1 teaspoon vanilla extract ‣ 1/2 teaspoon salt ‣ 2 1/4 cup all-purpose flour ‣ 2 tablespoon holiday jimmies, (sprinkles)

Using a stand mixer (or hand mixer + large bowl) cream together the butter, sugar, and brown sugar until light and fluffy.

Mix in the egg, vanilla, and salt until incorporated.

Slowly mix in the flour until the dough is crumbly.

Turn off the mixer and add the sprinkles, then use a spatula to gently fold them into the dough.

Separate the dough into two pieces. Lay each piece on a large piece of parchment paper and roll them into a log-like shape. Wrap the dough in parchment paper. Once done, set it in the refrigerator to chill!

When ready to bake, unwrap the dough logs, and use a knife to slice them width-wise to form the cookies. Place the sliced cookies on baking sheets lined with parchment paper.
