This tortellini pasta salad features al dente tortellini mixed with cherry tomatoes, mozzarella, red onion, and basil, all coated in a vinaigrette dressing.
‣ 1 pound three cheese tortellini, or any type that you'd like ‣ 1 cup cherry tomatoes, halved ‣ 1 cup mozzarella pearls, (small cheese balls) ‣ 1/2 cup red onion, chopped ‣ 1/2 cup fresh basil leaves, thinly sliced ‣ 1/4 cup extra virgin olive oil ‣ 3 tablespoon white wine vinegar ‣ 1 tablespoon honey ‣ 1/2 teaspoon salt ‣ 1/4 teaspoon black pepper
Prepare the tortellini per package instructions, then rinse well with cold water. Set the pasta aside for now.
In an extra large mixing bowl, add the extra virgin olive oil, white wine vinegar, honey, salt, and black pepper. Whisk well until dressing is combined.
Add the cooked pasta, cherry tomatoes, mozzarella pearls, red onion, and basil to the bowl, then use a spatula to toss to coat well in the dressing.
