VANILLA BEAN MADELEINES

While commonly called cookies, these vanilla bean madeleines are small and delicate butter cakes with light, crispy edges. Delicious with coffee or tea!

INGREDIENTS

‣ 1 cup all-purpose flour ‣ 1 teaspoon baking powder ‣ 1/4 teaspoon salt ‣ 4 large egg ‣ 3/4 cup granulated sugar ‣ 1 1/2 teaspoon vanilla bean paste ‣ 1/2 teaspoon almond extract, optional ‣ 1/2 cup unsalted butter, melted and cooled ‣ sprinkles, frosting, or powdered sugar, for garnish (optional)

Using a stand mixer (or hand mixer + large bowl), whip together the egg and sugar until thick and fluffy.

START THE BATTER

BLEND IN EXTRACTS AND DRY INGREDIENTS

Blend in the vanilla bean paste, almond extract, flour, baking powder, and salt

BLEND IN BUTTER

Finish by mixing in the melted and cooled butter.

ADD BATTER TO A MADELEINE PAN

Generously spray a madeleine pan with cooking spray, then add about 1.5 tablespoons of batter into each cavity. Once done, bake!
