Another week, another meal plan, and, you guys, I gotta be honest:
Time has suddenly started to move so slow.
It feels like eons ago that I planned out our meals for the week, but in reality, I was just scrambling to get my act together Sunday morning it was just a little more than a week ago. Maybe it’s the weather, maybe it’s the impending spring cleaning I need to do, or maybe I’m just working too much, but whatever the cause, after rushing through fall and most of winter I now feel like I’ve hit a brick wall.
And, who knows, maybe these time conflicts are all in my head (or, as The Husband likes to tell me, on “Planet Chrisy.”) But whatever the reason or the reality, all this slowness has me craving easy comfort dishes, and they came out in force for this week’s meal plan. The list this week is a little more “chicken heavy” than normal, but I couldn’t help myself; I’ve got a Costco-sized haul in my freezer to get through.
