This meal plan is part of a weekly series where I put together quick and easy dishes to help get you through the week. If you’re a foodie like me, then you know that sometimes all the meal possibilities can seem endless – and daunting – especially when you’ve got to juggle all your other responsibilities, too. I’ve had an exhausting week beginning the renovations on my mother’s new house, and I fear that it’s influenced the meal plan this week. There’s lots of chicken and beef on the menu, if only because those seem to be the foods I’m craving when I get home from another 6-8 hours of patching walls. Gotta reload the energy stores for the next day of work!
