This meal plan is part of a weekly series where I put together quick and easy dishes to help get you through the week. If you’re a foodie like me, then you know that sometimes all the meal possibilities can seem endless – and daunting – especially when you’ve got to juggle all your other responsibilities, too. Alright, you guys – the new layout is finally here (huzzah!) and I gotta be honest: I’m exhausted. And by that I mean completely and totally spent. I took one day off this week so I could rally my forces, but even with the extra TLC, everything above my shoulders still feels like mush. And I have a feeling it’s going to be like that for a few more weeks. 8+ months of work tends to do that to a person.
However, despite all my weariness, I was still able to whip together a tasty meal plan for you this week. And the best part about it? It includes all the foods I’d simply love to grab a double serving, bring it to the couch, curl up in a big comfy blanket, and balance the plate (or bowl!) on my knee while I binge watch my way through Stranger Things.
