Flavored with a delicious pumpkin maple syrup, this pumpkin pie cocktail can be served hot or chilled and is best when garnished with whipped cream and spices.
In a medium saucepan over medium heat, whisk together water, pumpkin puree, maple syrup, and pumpkin pie spice. While whisking occasionally, cook until mixture begins to simmer, about 5 minutes. Remove saucepan from heat.
Strain mixture through a fine mesh sieve and discard the solids. NOTE: If you'd like a more chilled cocktail, you can refrigerate the pumpkin maple syrup for up to 2 hours before using.
In a cocktail shaker filled with ice, add prepared spiced pumpkin maple syrup and spiced rum. Shake well.
Pour pumpkin pie cocktail evenly between two glasses. If desired, garnish the drinks with whipped cream, a dusting of pumpkin pie spice, cinnamon sticks, and crumbled gingersnap cookies.
